In general, Belgian Ales are stronger than most other types of beer, ranging from an uncommon 5 or 6% alcohol to 9, 10 and 11%. In addition they share a similar thick, yeasty flavor, stemming largely from the unique procedure as well as the particular type of yeast used. For the most part, the beers undergo the typical brewing process, and in addition undergo “bottle conditioning”, by which the beer is re-fermented in the bottle. If you look closely you may notice that the beer has a bit of sediment at the bottom of the bottle. This is the yeast, or “lees”, and adds that unmistakable “Belgian” flavor. Often this additional aging can go on for up to a year or two (incidentally, this also means that the beer will taste better out of the bottle than on tap).
