May’s first full moon marked an important date for fans of the Callinectes sapidus, otherwise known as the soft-shell blue crab. That phase of the lunar cycle signals molting season for the little crustacean, which typically peaks in June and July and ends early September. Time is of essence here, for not only is the molting season brief, but also, a soft-shell crab quickly re-grows its hard outer shell in just a matter of days, making it, well, a crunchy crab, or “papershell.” Don’t pass up the opportunity to taste this world-renowned delicacy prepared a variety of ways by Risibisi’s Chef Fabio Flagiello.


 

Figone Olive Oil-Maker Dinner

This evening will highlight one of Sonoma County’s best: Frank Figone from Figone’s Olive Oil Company. Frank pressed, milled and blended his way to the pinnacle of California’s olive oil industry, and while his expertise of everything olive wows you, Chef Fabio’s mouthwatering menu will convert you to devotee of all that is extra-virgin.
